PASTA SHELLS

PORK, RICOTTA & SPINACH

RECIPE.
-half kilo Italian pork sausages, squeezed out of its casing into small bits.
-2 cups spinach, roughly chipped
-1/2 cup ricotta cheese
-2 cloves garlic, minced
-1 small onion diced
-400g tin of diced tomatoes
-jumbo shell pasta, boiled for 2 minutes less than recommended and then individually laid out to cool.
-1 cup grated parmasan.

METHOD
-fry onion with some olive oil until soft
-add the garlic and pork and cook till pork is browned
-add chopped tomato and spinach and cook till spinach is done
-add ricotta, stir and cook for a min before taking off heat. -spray baking dish with olive oil and put oven on 180
-fill each shell with a spoon of mix
-bake for 10 mins and sprinkle with Parmesan cheese and bake for another 5.

TO SERVE
-garnish with chopped basil and eat as is. They are easy to even eat with your hands! -or spoon over some heated Passata that is infused with herbs or onion and garlic or you can spoon over a Sugo. (Sugo is tomatoes that have been slowly cooked with onion, garlic, herbs to makes a sauce.)
