Nom Nom! Today I jumped on stories and showed you all two types of vegetable sausage rolls I make for the kids. These can be made and frozen and then just pulled out of the freezer and into the oven when you need a relatively healthy snack or lunch for the kids. Or yourself 😉 Super easy Beef and Chicken options below. Enjoy x

BEEF SAUSAGE ROLLS
500g of Beef Mince
4 sheets of puff pastry
1 broccoli head, steamed and mashed. Wait till cool.
1 carrot, grated
1/2 brown onion, finely dice
1 egg, lightly whisk
Small handful of wholemeal bread crumbs
Sesame or poppy seeds

CHICKEN SAUSAGE ROLLS
500g Chicken Mince
4 sheets of puff pastry
1 carrot, grated
1 zucchini, grated
1/2 brown onion, finely diced
1 egg, lightly whisk
Small handful of wholemeal bread crumbs
Sesame or poppy seeds

METHODS
1.Combined all ingredients into a bowl. Mix well. 
2.Lay out sheets of puff pastry and keep the blue wrapping on them.
3.When pastry softens, make a long sausage of meat mix and lay on the edge of the pastry.
4.Roll the pastry to make a long sausage roll, removing it from the blue plastic. But then wrap the whole thing back in the plastic. This stops them icing up in the freezer. Cut into servings. I usually cut in thirds.
5.Wrap with glad wrap and freeze.
6.When ready to cook, simply remove all wrapping and place in oven on 180 until golden brown. 

Note: A little moisture can come from the sausage roll during cooking. This is just the vegetables but most will be absorbed by the breadcrumbs. And substitute other left over veggies as you wish.
